Simple ingredients, big flavor — a trucker’s recipe born on the open road.
Here’s how to make Pedro’s Steak and Guacamole:

Prep the Potatoes: Wash and dice your red-skinned potatoes into bite-sized cubes. Toss them with olive oil, salt, pepper and your favorite seasoning blend.

Season the Steak: Pat your steak dry with paper towels, then season both sides with salt, pepper and a little steak seasoning or dry rub for extra flavor.

Preheat the Air Fryer: Set your air fryer to 400°F and let it preheat for a few minutes.

Cook the Steak and Potatoes: Place the seasoned potatoes on one side of the air fryer basket and the steak on the other. Air fry for 8 minutes per side, flipping both halfway through the cooking time for even crisp and char.

Mix Up the Guacamole: While everything cooks, dice your bell pepper, onion, tomato and cilantro. Stir them into your guacamole for a fresh, chunky mix. For an extra kick, finely slice a serrano pepper and add it in.

Serve and Enjoy: Once the steak is perfectly cooked and the potatoes are golden and crispy, plate everything up. Spoon your fresh guacamole on the side, garnish with a little cilantro and dig in!
