Drivers know their way around more than just the highway and they understand the importance of eating healthy on the road.
Here’s how to make Pedro’s world-famous Loaded Scrambled Eggs.

Heat the pan: Add a small amount of butter to a pan and let it melt over medium heat.

Cook the bacon: Add the chopped bacon and cook until it begins to brown.

Add the veggies & tortilla: While the bacon is cooking, dice the bell pepper, onion and tomato. Cut the corn tortilla into small pieces, then add them all to the pan.

Stir occasionally: Let everything cook together for a few minutes, stirring occasionally so nothing sticks.

Beat the eggs: In a separate bowl, beat your eggs until smooth.

Add eggs to the pan: Pour the beaten eggs over the cooked mixture. Stir gently and cook until the eggs reach your preferred doneness.

Top it off: Remove from heat and sprinkle mozzarella cheese on top. Garnish with chopped cilantro.

Serve & enjoy: Dig in and enjoy your delicious, hearty breakfast.
